This legendary coffee is 100% Ethiopian Yirgacheffe grown at 5000-6500’ on a high plateau under a forest canopy of shade trees by the farmers of the Oromia Coffee Farmers Cooperative (OCFCU). They are also certified Organic and certified Fair Trade. The cooperative also keep bee hives for pollination and honey production. The farms are also home to a wide variety of bird species. This classic Yirgacheffe is historically the only coffee allowed in the palaces of Ethiopian Kings. It has been said that “if coffee were a religion, Ethiopia would be the Holy Land”. This is the region where Ethiopian goat herder Kaldi first discovered coffee, the birthplace of coffee. This classic Ethiopian has been prepared using a washed method of preparation whereby the coffee is washed, depulped and then dried on raised beds. It has a very uniform grading and beautiful green blue appearance before roasting. While it has wonderful flavor throughout the roast spectrum, the Full City plus (just beyond medium) roast profile seems to bring out the best in this lot. This Yirgacheffe has citrus and floral notes both in the nose and up front in the cup. It has a soft brightness, deep rich dried fruit and milk chocolate flavor with creamy full body and a lingering clean sweet, smooth finish. Spectacular by the cup or as a single origin espresso.
